For our next educational class, we were excited to visit Infinite Monkey Theorem (IMT)’s new location on the east side. This urban winery’s roots are in Denver and when they opened their second location in Austin in 2015, they were on South Congress and 71. They recently moved into a much bigger space on East 7th Street.
Shana, IMT’s Taproom Manager gave us a tour of the new winery while explaining the different wines we tasted. From sparkling to rosé to red to wine cocktail, we enjoyed all the different styles! Did you know IMT was one of the first winemakers in the U.S. to put wine in a can? Perfect for summer, these cans are available at your local grocery store. And yes, they do have frozen wine slushies at their taproom year round!
Their winery also features food truck Austin Rotisserie, who provided our group some delicious samples of their roasted chicken, potatoes, and chicken salad sandwiches. What a treat!

When you visit IMT, bring your (well-behaved) pup because they are pet-friendly! Also, drive around the corner to park in their spacious parking lot.
